Ingredients:

  • 150g nut pulp (from making homemade nut milk)
  • 75g plain flour
  • 1 tablespoon olive oil
  • A pinch of salt

Optional Seasonings:

  • Herb Blend: Dried rosemary, thyme, and basil for a Mediterranean flavour.
  • Spicy Kick: A pinch of chili powder, smoked paprika, and black pepper.
  • Zesty Citrus: Grated lemon or orange zest with sea salt for a tangy twist.
  • Cheesy Twist: Nutritional yeast or a pinch of Parmesan for a “cheesy” taste.
  • Garlic & Herb: Garlic powder with parsley or chives.
  • Everything Bagel: Poppy seeds, sesame seeds, dried onion, and garlic flakes.
  • Italian Blend: Oregano, basil, and a touch of fennel.
  • Sweet & Savoury: Cinnamon, a pinch of salt, and a drizzle of honey.
  • Seaweed & Sesame: Crushed seaweed (like nori) and sesame seeds for an umami boost.
  • Za’atar: This Middle Eastern blend (thyme, sesame seeds, and sumac) brings an earthy flavour.

Instructions:

  1. Preheat the Oven: Heat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Mix Ingredients: In a large bowl, combine the nut pulp, flour, olive oil, and salt. Add your choice of seasonings to take your crackers up a notch.
  3. Form the Dough: Mix until a dough forms. If it’s too dry, add a bit more olive oil or water, a teaspoon at a time.
  4. Roll Out: Place the dough between two sheets of parchment paper and roll it out thinly (about 2-3mm) for a super-crispy texture.
  5. Score into Squares: Remove the top parchment layer and use a knife or pizza cutter to score the dough into squares or rectangles.
  6. Bake: Transfer to the oven and bake for 15-20 minutes or until golden and crisp. Keep an eye on them, as baking times can vary.
  7. Cool & Break Apart: Let the crackers cool, then break them along the scored lines.
